Stuffed Pepper Soup 2 lbs. ground beef 2 quarts water 1 (28 oz) can diced tomatoes ( undrained ) 1 (29 oz) can tomato sauce 1 cup uncooked long grain rice 2 cups chopped green peppers ( about 2 large peppers ) 2 beef bouillon cubes 2 tblsp. packed brown sugar 2 tsp. salt 1 tsp. pepper Stove Top: In a 6 qt. saucepan or Dutch oven, brown beef; drain. Add remaining ingredients and bring to a boil. Reduce heat; cover and simmer for 30 to 40 minutes or until tender. Crock Pot: I a large crock pot. I brown my meat and put everything in the crock pot for 6-8 hrs. on low. I use the long grain rice, If you use minute rice then wait till about 1/2 hr to an hour of soup being done to add the rice. Also only 1 1/2 qts. of water will fit in the crock pot with out it boiling over so when soup is done add 2 cups of water.

I have to cut this in half to make but it sure sounds good. I love stuffed green peppers. Have you ever made it and froze the left-overs??

Thanks Deb. I have everything but the tomato sauce. Not something I use often, so will get that at the store. This really sounds good. LindaNY said she grabbed the recipe from your FB page and was making it a few nights ago.
I figured if I froze it (prior to adding minute rice) then I could add the rice to the thawed mixture and let it simmer for a bit.
