I was given some of these for Christmas and have to say they're VERY good. The recipe was from a healthy eating cookbook. Less butter, no white sugar, and a very good taste. When I make some I will use the Craisins as well.
Whole Wheat Oatmeal Cookies 1 c whole wheat flour 1 tsp ground cinnamon 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 c firmly packed brown sugar 1/4 c unsweetened applesauce 2 egg whites 2 tblsp butter, melted 1 1/2 tsp vanilla 1 1/3 c uncooked oats 1/2 c raisins (I used Craisins) 1/4 c. white chocolate chips (optional) Preheat oven to 375 degrees. Lightly spray cookie sheets w/ nonstick cooking spray. Combine Flour, cinnamon, baking powder, baking soda and salt in medium bowl; mix well. Combine brown sugar, applesauce, egg whites, margarine and vanilla in large bowl; stir until mixture forms coarse crumbs. Add flour mixture; mix well. Stir in oats and raisins. Drop rounded teaspoonful of dough, 2 inches apart onto prepared cookie sheets. Bake 10-12 mins or until golden brown. Cool on wire racks. Makes 2 1/2 dozen.
