Apple Lemon Chess Pie
1 cup sugar ½ tsp grated lemon rind (Use a fresh lemon) 4 eggs beaten 3 tbsp lemon juice ¼ cup butter melted 1 cup applesauce unsweetened 1 Deep Dish Pie Shell Vanilla Flavoring (opt.)
Mix all ingredients together thoroughly, pour into a deep dish pie shell and bake 450 degrees for 15 minutes and then decrease to 350 degrees and bake 15 minutes or until set. Refrigerate any uneaten pie.
Note: I peeled 3 large apples and cooked them down for the applesauce. Much better than the unsweetened you buy at the store. I used 1 tsp. Vanilla. Next time I'll only use 1/2 tsp. since I use real vanilla.

Make sure if you make it Linda that you zest the lemon not grate it. It wasn't bad. Only one piece left. TG for neighbors to get rid of stuff. lol

You're welcome. I didn't know what 'lemon zest' was until John's sister sent me a recipe for Banana Muffins and it called for lemon zest. I had to ask her. rofl
