well, i just got done canning 3 1/2 quarts of tomatoes. they're starting to ripen a bit faster. the first batch was 1 quart, then last week 1 2/3 quarts. little by little, i'll get enough for the winter. i used to do anywhere from 80 to over 100 quarts.

Looks so nice Barb. We didn't get enough for me to do any canning. Hubby eats too many tomatoes every day. They're gone too quick.

Looking good there Barb. Takes me down memory lane. ;D Linda, if you will flash freeze the corn you will have better corn. Just stick them all in the fridge or freezer and cool them as fast as you can, after they have gotten very cold or frozen you can wrap them. I have done that and was just like fresh corn. I do have to admit there was a time or 2 that didn't work so well, but It was my fault. Had kids, and a job and house to care for, and goofed up.

How do you do your corn? I never had any luck with it. i boil the ears for about 5 minures, then chill in cold water. then i take the kernels off the cob. i package it then in two cup packages adding a tsp of sugar to each. then i seal using my vacuum sealer. it tastes like fresh when you eat it. i don't have much luck when i freeze the cobs. i used to freeze it using doubled sandwich bags trying to get out as much air as i could before sealing the bags.

That's how I used to do mine too Barb. Back then I used ziplock bags (no vac. sealers back then).

I never had any luck with it. i blanch the ears for maybe 5 minutes, cool, then take the kernels off the cob. i use doubled sandwich bags and put two cups in them. i find that this is equivalent to say a can of corn. then add a tsp of sugar and seal them trying to get most of the air out.
